Kombucha Part .5
I had to add a .5 to this series because many of you do not have people you can ask to give you a kombucha Scoby. So, here is a way to make kombucha from scratch…
SCOBY from Scratch:
3 1/2 cups boiling water 1/2 cup white sugar
– Dissolve completely
4 bags of black or green tea (we use decaf green.)
– steep the tea for 8-10 minutes
Add 3 1/2 coups of room temperature water
– let everything cool to room temperature
– remove tea bags
Add 1 cup unflavored, organic, raw, store-bought Kombucha by GTS (see photo) – stir to combine
Put in 2qt glass jar
Cover w/ tea towel and rubber band
Store in warm dark place for 4weeks (keep it away from the microwave or it will die)
You will see an opaque white film growing on top of the kombucha liquid. This is not mold, it is the SCOBY growing –
DON’T THROW IT AWAY!!!
After 4 weeks, gather up the scoby and 1 cup of kombucha liquid (called liquor) to start your kombucha tea.
